【中文摘要】 以鸡腿菇为材料,菌落总数为研究对象,采用中心组合设计响应面分析法研究了超高压处理对鸡腿菇菌落总数数量级的影响。建立了以温度、压力和保压时间为参数的超高压影响鸡腿菇菌落总数死亡数量级的二次多项式数学模型,理论分析了模型的预测能力较强,验证试验相关性分析证实了模型的准确性和可靠性。最优影响参数组合为:温度25.0℃、压力268.1 MPa、保压时间14.3min。
【英文摘要】 Effects of ultra high pressure processing on total colonies of Coprinus comatus were studied by central composite design with response surface methodology in this paper.The second order quadratic equation associating temperature,pressure and pressure holding time with sterilization magnitude of total colonies was established,the good prediction ability of the model was confirmed with theoretical analysis,and the accuracy and reliability of the model were verified by correlation analysis of the validation data.The optimum process parameters for the sterilization were obtained as: temperature 25.0℃,pressure 268.1 MPa,and pressure holding time 14.3min.
