【中文摘要】 分析了杏鲍菇和阿魏蘑干品中的氨基酸、常规营养成分、微量元素和维生素含量。结果表明 ,杏鲍菇和阿魏蘑氨基酸总量分别为 12 .72 g 10 0 g和 19.5 5 g 10 0 g。其中 ,必需氨基酸、鲜味氨基酸 (Glu、Asp)和甜味氨基酸 (Ser、Gly、Ala)分别占氨基酸总量的 4 3.2 4 %、2 4 .84 %、16.2 7%和4 0 .97%、2 7.83%、15 .96%。杏鲍菇和阿魏蘑的蛋白质、脂肪、总糖和粗纤维含量分别为 15 .4 %、0 .5 5 %、5 2 .1%、5 .4 %和 2 5 .6%、0 .77%、4 9.7%、6.7%。铁、钙、锌和硒含量在杏鲍菇和阿魏蘑中分别为 2 .9mg 10 0g、14 .2mg 10 0 g、38mg kg、0 .0 2 3μg g和 3.3mg 10 0 g、6.9mg 10 0 g、78mg kg 0 .0 4 0 μg g。VC、VB1和VB2 含量在杏鲍菇和阿魏蘑中分别为 2 5 .3mg 10 0 g、0 .193mg 10 0 g、1.4 3mg 10 0 g和 2 4 .5mg 10 0 g、0 .2...更多 4 8mg 10 0g、2 .12mg 10 0 g。由此可知 ,杏鲍菇和阿魏蘑是两种营养价值较高的食用菌。从对食品高蛋白含量要求的角度分析 ,阿魏蘑的营养价值优于杏鲍菇 还原
【英文摘要】 The contents of amino acids, conventional nutrients, microelements and vitamins of P.eryngii and P.ferulae cultivated with cotton seed hull compost were analyzed and compared. The experiments results showed that the total amino acid contents of P.eryngii and P.ferulae were 12.72g/100g and 19.55g/100g resp, in which the essential amino acid contents, the delicious amino acid contents and the sweet amino acid contents made up 43.24%, 24.84%, 16.27% and 40.97%, 27.83%, 15.96% of the total amino acid contents resp.. And it was also confirmed in our experiments that the contents of protein, fat, total sugar and crude fibre in P.eryngii and P.ferulae cultivated with cotton seed hull were 15.4%, 0.55%, 52.1%, 5.4% and 25.6%, 0.77%, 49.7%, 6.7% resp.. While the contents of Fe, Ca,Zn, Se, VC, VB 1 and VB 2 in P.eryngii and P.ferulae cultivated with cotton seed hull compost were 2.9mg/100g, 14.2mg/100g, 38mg/kg, 0.023μg/g, 25.3mg/100g, 0.193mg/100g, 1.43mg/100g and 3.3mg/100g, 6....更多9mg/100g, 78mg/kg, 0.040μg/g, 24.5mg/100g, 0.248mg/100g, 2.12mg/100g resp..
