【中文摘要】 研究了金针菇液体菌种培养过程中菌丝球数量、pH、还原糖和氨基氮含量及酶活性等指标的变化情况。结果表明 ,菌丝球数量和活性与上述指标具有一定的相关性。当培养液中还原糖含量和氨基氮含量分别为 3.4 0 g 10 0mL和 11.10mg 10 0mL ,纤维素酶活性、漆酶活性和蛋白酶活性分别为 1.10U、0 .0 17U和 0 .17U ,pH为 6.3时 ,菌丝球数量与活性最高
【英文摘要】 During the culture process of Flammulina velutipes liquid strains, the variation of mycelial pellet numbers, pH, the contents of reducing sugar and amino nitrogen and the enzyme activity was studied. The results showed that the numbers and activity of mycelial pellets were related to those indexes, and that the quality of the liquid strain was the best when the contents of reducing sugar and amino nitrogen were 3.40g/100mL and 11.10mg/100mL resp. and the activities of cellulase, laccase and proteinase were 1.10U,0.017U and 0.17U resp..
