    Major Nutritional Components of Boletus impolitus Fruit Bodies

    【英文摘要】 Levels of amino acids, crude protein, soluble sugar, crude fat, crude fiber and various mineral elements in fruit bodies of Boletus impolitus have been determined using standard analytical methods. Amounts of crude protein and crude fiber were similar to those found in other Boletus species, and the concentrations of essential and non-essential amino acid were 7.77 and 11.40 g/100 g, respectively. Phenylalanine, leucine and proline levels were higher compared to levels reported for other common mushroom fruit bodies. Levels of the heavy metals, Pb, Cd and As, met the food safety standard levels specified by the Ministry of Health of the People’s Republic of China.
