【中文摘要】 通过优化培养基组成,提高鸡腿菇发酵液对非酶糖基化反应的抑制活性。试验以抑制非酶糖基化反应活性为指标,通过单因素试验筛选了适宜碳源、氮源、无机盐以及复合营养因子,通过正交试验进一步优化培养基组成。试验结果表明,使用优化培养基[麦芽糖4%,牛肉膏0.6%,黄豆芽(煮汁)200 g/L,洋葱(煮汁)100 g/L,MgSO40.12%,FeSO40.10%,CuSO40.03%,ZnSO40.05%]液体培养鸡腿菇,其发酵液对非酶糖基化反应的抑制率高达97.32%。
【英文摘要】 A culture medium for Coprinus comatus has been designed whereby the non-enzymatic glycation-inhibiting activity of the fermentation broth was maximized.Different carbon and nitrogen sources,inorganic salts and natural components were screened initially using single factor experiments,followed by orthogonal tests designed on the basis of the data obtained.The highest inhibition rate(97.32%) was achieved using a culture medium composed of maltose 4%,beef extract 0.6%,soybean sprout juice 200 g/L,onion juice 100 g/L,magnesium sulfate 0.12%,ferrous sulfate 0.1%,copper sulfate 0.03% and zinc sulfate 0.05%.
