【摘要】 以平菇(Pleurotus ostreatus)菌株新831、黑平王和黑平5号为试材,研究其在不同生长发育阶段的羧甲基纤维素酶、滤纸纤维素酶、淀粉酶、蛋白酶、木聚糖酶、漆酶、过氧化物酶活性的变化规律。结果表明,在平菇栽培过程中,几种胞外酶活性变化具有明显的阶段性。羧甲基纤维素酶、滤纸纤维素酶、木聚糖酶、淀粉酶和蛋白酶在菌丝生长阶段酶活性较低,在子实体成熟期都出现酶活高峰;漆酶和过氧化物酶在菌丝满袋期酶活达到顶峰,随后开始下降,一、二潮菇间期出现次高峰。
【Abstract】 Extracellular enzyme production [carboxymethyl cellulase(CMCase),filter paper cellulase(FPase),amylase,protease,xylanase,laccase and peroxidase] by three strains of Pleurotus ostreatus(Xin831,Hei Pingwang and Heiping-5) was determined at different stages of the cultivation cycle.CMCase,FPase,xylanase,amylase and protease levels were relatively low during the mycelium growth phase,and peak activities of these enzymes were recorded at the fruit body maturation stage.Highest laccase and peroxidase activities were recorded when the fungal mycelia had fully colonized the growth substrate.Enzyme levels then gradually decreased although a second,smaller,peak of activity was observed during the interval between the first and second flushes.
